Introducing Mega Terps - the latest Thiol Enriched release from Freestyle Hops and Phantasm. Mega Terps brings together a potent blend of Thiols, Terpenes and Esters into one convenient pellet to help you dial up unique New Zealand tropical aroma in your beers.
Mega Terps is a custom blend of Southern Cross, Motueka and Rakau designed to provide the highest levels of supporting terpenes and esters, then combined with Phantasm's patented thiol precursors. These lots were selected for having the highest levels of linalool, geraniol, citronellol and 2MIB along with high levels of cysteine bound 3SH. Blended with full spectrum precursor rich lots of Marlborough Sauvignon Blanc derived Phantasm, this is a hot side targeted addition for maximising tropical aroma intensity.

Esters, Terpenes and Thiols have come in and out of fashion, with each taking its time in the sun. The thing is, all three of these compounds are important to create attractive aromas in beer. We've worked hard to identify huge levels of these "foundation" compounds and combine them together for effective ease of use. Mega Terps is best added on the hot side or during active fermentation, so full bio transformation of these compounds can occur with your different yeast strains, or for even further release partner with a Thiolised strain, like White Labs PurePitch® Next Generation WLP077 Tropicale Yeast
For non Thiolised yeast strains Wyeast - London Ale III, Fermentis 34/70, K-97,
Lallemand's Verdant, Pomona and Diamond have been reported to have some biotransformative ability also.
There are ongoing efforts to develop non GMO thiol capable strains and we expect to see new strains emerging on the market shortly.
Beer that is fermented with a non-GMO strains, would benefit from layering hops containing the thiol compounds throughout the brew.
We recommend whirlpool dosage rates from 4 g/L upwards depending on style and yeast strain.
Phantasm hops will work across a range of styles, from IPAs through to Lagers.
Hops such as Motueka, Citra, Nelson Sauvin, Galaxy and Simcoe will work well in dry hop, but also feel free to experiment!
